In this updated version, we will butter poach lobster tails in a beurre blanc, then make a crispy and flavor full fennel and potato pancake that has the crispiness of a hash brown, but the inner creaminess of a great latke. We will make a fennel herb salsa to put on top that will keep the flavors bright lively, and fresh.
