    The core of Berber cuisine is based on the practice of communal eating, where numerous dishes are shared within the family. Dining occasions are incredibly sociable, filled with gaiety and conversation. Hospitality and nourishment are essential components of their culture.

    What To Expect

    • Couscous - A traditional Berber dish, couscous is often served as the centerpiece of a meal. It usually consists of semolina grains, vegetables and meat. The essence of Berber cuisine revolves around a communal style of dining, with many dishes enjoyed among family members. Mealtimes are very social occasions filled with laughter and conversation, and hospitality through food is an important part of the culture.

    For this experience you can choose from two menus:

    1)Mint Tea, Moroccan Salad and a Tagine (Beef, Chicken or Vegetarian).

    2)Mint Tea and Couscous (Beef, Chicken or Vegetarian).

    We will begin by welcoming you to my home with Moroccan tea and pastries where I will explain the day's program. We will then journey together to local stores for fresh ingredients where you can learn how to pick the best produce by sight, touch and smell.

    Once we have all that we need for our cooking class I'll provide step-by-step instructions while helping you practice your skills. After completion it's time to feast on our meal in true Berber family fashion.

    Sample Menu

    • Moroccan Salad - The simple ingredients make it an ideal accompaniment for many dishes; it is commonly served as a side salad alongside tagines in Morocco.

    • Tagine - This is a typical Moroccan dish including stewed meats and vegetables cooked slowly in a conical pot over charcoal heat.

    • Couscous - A traditional Berber recipe featuring semolina grains mixed with meat and vegetables; typically regarded as the centerpiece at mealtimes.
