Overview

    Kobe’s Shushinkan sake brewery produces some of Japan’s most celebrated brands, including the sake served at the Nobel Prize ceremony dinner. With the help of an English-speaking guide and background video, visitor groups can see parts of this working brewery in operation to learn the process - how, step by step, rice is finely polished, then carefully fermented in spring water from the Rokko mountains above Kobe. A museum section shows how the master brewer’s skills evolved over time while a souvenirs area has a tasting corner with exclusive products and sake-related crafts (not sold anywhere else). The visit ends with a kaiseki-style Japanese meal – multiple small dishes of seasonal food items - including seafood, served in a former brewing warehouse building, and chosen to match 5 different types of sake perfectly. Sweet, dry – even vintage sake.
